New Year’s Eve: The Dinner

Yo! What’s up, guys? There are various ways to celebrate a brand new year, but for me, it’s that new year’s eve dinner and the midnight toasts are the ones that make it special. So for our new year’s eve dinner me and my mom whipped up some restaurant style homemade burgers with artichoke, carrots, and french fries. For dessert, some chocolate cupcakes which are always good. Of course, you can eat this any time of the year. 🙂  I’ve got the recipe and ingredients down below.

The Burger- Patty- Ingredients:

  • ½ cup rice
  • 1 can black beans (I used canned)
  • 1 tsp onion powder or 4 tbsp onions
  • ¼ cup bread crumbs
  • 1 egg
  • 1 tsp garlic powder
  • ½ tsp cumin powder
  • Big handful of mint

Recipe:

First, take the rice and coarse grind it in a food processor. Do the same to the black beans. Coarse grind the onions if you are not going to use the onion powder. Add them and all the ingredients to a bowl and let the mixture sit in the fridge for 30 minutes. Once they are set, make them into 4 equal patties and grill them for a couple minutes on each side. Your patties are done.

The Burger Spread and dipping sauce- Ingredients:

  • ½ cup mascarpone cheese
  • ¼ cup ricotta cheese
  • 2 tbsp cream cheese
  • 4 tbsp parmesan cheese
  •  ⅛ cup yogurt
  • 1 ½ tsp oregano
  • 1 ½ tsp garlic powder

Recipe:

To a bowl, add the mascarpone, ricotta, and cream cheese. Mix it well till it is a smooth paste. Divide into 2 bowls with equal portions of the above cheese mixture. To one bowl, add the garlic powder and parmesan cheese bringing it to a spreadable consistency adding water if necessary. This is your burger spread. To the other bowl add the yogurt, oregano and water because you’ll need to bring to a dipping sauce consistency. This will be your dipping sauce for the carrots and potatoes.

Artichoke- Ingredients:

  • 4 heads of artichoke
  • 4 lemons
  • 3 bay leafs
  • Couple garlic cloves
  • Big pot of water.

Recipe: 

To all four of the artichokes, open the leaves up a bit and run under cold water, peel it’s stem, trim it’s outer leaves a bit, and squeeze half lemon in each head. In a big pot of cold water, add bay leaves, garlic cloves, and 1 whole squeezed lemon. Take another lemon cut in half and put in the water. Then take the artichokes and boil them in the water for about 45 minutes until they’re soft.

Sides: Potatoes and carrots: Slice your potatoes and fry them in a pan with some cayenne and salt until fully cooked. And just cut up your carrots, you can eat them raw.

Assembly: Take 4 toasted burger buns and put the mascarpone spread on the top and bottom half of each bun. Then put the patties into the buns and place them on a plate. Then cut your artichokes in half, scoop  out the fibrous spikes and put them on your plate. Put your potatoes and carrots on the plate with the dipping sauce as well. All done.
